Kibbeh Cherry Roll
Kibbeh Cherry Roll
Ingredients
2 tablespoons oil
2 red onions, sliced
2 kibbeh cherry rolls
1/2 cup tamarind paste
1/3 cup Lemon juice
1 can pitted cherries
Salt, if needed
Instructions
Preheat oven to 375°F.
Heat 2 tablespoons of oil in a sauté pan.
Add the 2 sliced red onions and sauté until softened and lightly golden. Remove the onions from the pan and set aside.
Place the 2 kibbeh cherry rolls into the same pan and sauté them, turning gently so they brown on all sides.
Add the sautéed onions back into the pan.
Add the tamarind paste, lemon juice, and 1 can of pitted cherries.
Taste the sauce and add salt if needed.
Transfer to the oven and bake covered at 375°F for 45 minutes.
Remove from the oven and carefully uncover the kibbe rolls. Use a sharp knife to score diagonal slits on the top of each roll, 1" apart. Cover and return to the oven, uncovered, for another 30-35 minutes. Remove and serve immediately with white rice.
